Mediterranean Flavors

Total cost: $7.05

For the meat
1lb ground lamb or beef
1 onion minced or grated
1 tsp. allspice
1/2 tsp. cinnamon
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 parsley optional

2 medium Potatoes peeled and sliced
1 tsp salt
1 Onion sliced
2 medium Tomatoes sliced
1 6oz can of tomato paste
2 Cups water

In a large bowl mix the first 7 ingredients together.  Mixing until all of the onions and spices have been incorporated into the meat.  Spill the meat into a medium sized casserole dish add flatten and spread evenly to approximately 1 in.  Peel and slice the potatoes a little less then 1/4 inch thick and layer the potatoes on top of the meat.  Add half of the salt. Do the same with the tomatoes and onions and sprinkle the remaining salt.  Mix the tomato paste with the water and pour over the Kefta.

Cove and bake in a preheat oven at 400˚ for an hour remove foil and bake until the potatoes are cooked through approx 15 to 20 minutes. Serve over rice.
